Italian food piazza, Cibaria, to be opened at Manly Pacific Hotel

Not content to see out 2024 with just one opening, one of Sydney’s most famed restaurateurs Alessandro and Anna Pavoni are set to open perhaps their most ambitious project yet.
The duo behind a’Mare, Ormeggio at the Spit and Postino Osteria are set to open an Italian food world, Cibaria Manly, at the newly renovated Manly Pacific Hotel on December 16.
Coming from the Italian word ‘Cibo” meaning food, Cibaria offers diners a variety of different Italian dishes from open kitchens around the beachfront venue.
Pavoni jokes that everything just ends in “ria” but stations in the venue included an antipasteria, with dishes like king prawns, vitello tonnato, salumi and a gorgonzola trolley, a spaghetteria, a bisteccheria where dishes cooked over coal, a pasticceria, a gelateria and cafeteria. Pavoni adds there is also a “cocktaileria”, a “birreria” and “champagneria.”
Pavoni explains the concept is supposed to replicate the piazza’s in his homeland of Italy, where about leaving your apartment everything you needed would be at your doorstep.
“I developed this concept years back,” Pavoni said.
“Seeing my vision come to life is the most rewarding thing.
The ambitious project comes after Pavoni opened Postino Osteria in Summer Hill earlier this year.
“I feed off adrenaline and a busy day,” he said. “I don’t want to throw away this opportunity.”
