HOMEMADE CUSTARD

“A very tasty, homemade custard that is cooked on the stovetop in just minutes,” says Best Recipes contributor Shelly68. “Great on Christmas pudding or with sliced banana. This recipe was given to me by an acquaintance – I wish I could take credit for it!”

INGREDIENTS

  • 2 whole eggs
  • 3 tbs. cornflour
  • 3 cups milk
  • 3 tbs. sugar *to taste
  • 1 tsp vanilla essence

METHOD

1. Whisk eggs, cornflour and milk together in a saucepan until smooth.

2. Continue whisking on stovetop until custard becomes thick and creamy.

3. Remove from heat, then whisk in sugar and vanilla.

NOTES

Do not add sugar while on heat as it will stick to the pan.

You can make variations by adding some cocoa to make chocolate custard or add some cinnamon or spices for a Christmassy taste.

For a denser flavour try two cups of milk and a dash of maple syrup.

EASY CHOCOLATE AND CONDENSED MILK TRUFFLES

INGREDIENTS

  • 250 g Arnott’s Marie biscuits
  • 1/3 cup cocoa
  • 1 cup desiccated coconut
  • 395 g sweetened condensed milk

METHOD

1. Process biscuits and blend well.

2. Transfer mixture to a bowl.

3. Add cocoa powder and one quarter of the coconut.

4. Make a well in the centre.

5. Add the condensed milk and mix together with a wooden spoon until evenly moistened.

6. Chill for 30 minutes.

7. Spread remaining coconut onto a plate.

8. Roll level tablespoons of the mixture into balls. Roll in the coconut.

9. Store in an airtight container in the refrigerator.

NOTES

You can use a heaped teaspoon when making the balls, so the mixture will go even further.

Will easily last in the fridge for up to a week.
