Northgate’s Aether Brewing and Flour and Chocolate team up for unusual beer collaboration

BEER and pastries might seem like strange bedfellows, but as soon as Aether Brewing and Flour and Chocolate opened up doors apart in Northgate they started thinking about how to work together.
The two Brisbane favourites have teamed up to release a cream ale inspired by Flour and Chocolate’s popular bee sting pastry.

Aether owner Dave Ward said the beer had been eight months in the making and needed help from an American company to get the flavours of baked goods into a beer.
“When we launched the tap room last year Flour and Chocolate were some of the first people through the door, and straight away we were talking about how we can do something together. So it’s been about eight months in the making,” he said.
“What makes it tricky though is that you can’t put fat in beer, whether that’s cream or even things like almonds.”
Mr Ward said he worked with an American company that helped get flavour extracts that could be used in brewing.
“When we had that we went back to Flour and Chocolate and said “I think we’ve got the flavours here’.”
Aether Brewing relocated to Northgate in October 2019 after Mr Ward and co-founder Jimmy Young parted ways.
