Maker of the ice-cream in the iconic Ekka Sundaes opening new store in Paddington

The ice creamery that makes the Ekka’s iconic strawberry sundaes is opening a new store, and it is just the first step in their expansion.

Lick Ice Cream will open a new store in Paddington from today; it’s third after outlets in Graceville and Morningside.

Lick, who makes the ice cream in the Ekka strawberry sundaes, will also be moving its production kitchen from Coopers Plains to a space in Seventeen Mile Rocks that is six times the size, and they have plans to open more stores across Brisbane.

Lick co-owner Kim Douglas said the new Paddington store was her and her business partners’s first step in growing the business they had purchased in 2019.

“We are planning to open more stores,” she said.

“When we bought it we knew we wanted to grow it.”

Ms Douglas said Paddington had a community feel that fit what Lick was looking for.

“We wanted to go somewhere with a great sense of community,” she said.

“We’ve had a great relationship with the community and the schools around Graceville and we wanted to find somewhere we could do that again.

“Paddington is such a great area with shops, cafes and restaurants. We think it will be a perfect fit for us.”

The Paddington store will be smaller than the Graceville or Morningside stores, but will sell more flavours of ice cream.

Ms Douglas said Lick had been significantly impacted by the COVID-19 pandemic with much of the business revolving around supplying events that had to be cancelled.

Ms Douglas feared Lick may lose another major customer when the Ekka was cancelled. Lick uses the RNA’s recipe to supply strawberry ice cream for the show’s iconic sundaes.

But they were instead sold at pop-up stalls across Brisbane with more than 90,000 ice creams sold, funding medical research at the Prince Charles Hospital.
