Food truck giant Mac From Way Back opens shop at Beenleigh
Queensland’s first dedicated mac and cheese food truck has planted roots, opening a shop south of Brisbane. The eatery opened yesterday and chef Dane Coote has already pumped out many overflowing bowls of golden mac ‘n’ cheese.

If you need a refresher, the food truck has been on the festival and market scene for three years and is touted as Queensland’s “only dedicated mac and cheese” eatery.

Yesterday, owner Dane Coote, 37, opened his first bricks and mortar location south of Brisbane at Beenleigh.
Coote, who worked as a fine dining chef in Melbourne, started Mac From Way Back in 2016.
“The food scene was really taking off and I wanted to be a part of it,” he said.
In 2018, the mac and cheesery opened a pop up location inside Fortitude Valley’s Sabotage Social.
Looking for something a bit more permanent — Coote said he jumped at the Beenleigh shop, that was previously leased by hamburger joint Burger’d.
“I saw it on Facebook and it had the perfect fit out. We didn’t have to do anything to it so we could just jump straight in and start cooking.”
Coote said the heroes of his menu are the feral fries, that come loaded with mac ‘n’ cheese, bacon and chilli mayo, and the Mac Daddy — a burger brimming with beef brisket, bacon, onion rings and mac.
While Coote has put the brakes on his food truck for now, he said he will still do the odd festival.
Mac From Way Back is open Wednesday to Sunday from 11am until 9pm — with the shop staying open until 10pm on Friday and Saturday nights.
