One of Tasmania’s most celebrated restaurants, the Agrarian Kitchen, has been given the “amazing honour” of serving up its award-winning cuisine at next year’s Australian Open as owners Rodney Dunn and Séverine Demanet prepare to take over the ritzy AO Glasshouse during the grand slam tournament.
It’s the first time a non-Victorian restaurant has been granted the opportunity and Mr Dunn said he and Ms Demanet were “feeling really good” about representing the restaurant “in the best light”.
“It’s not something that you ever think you’re ever going to get to do and [it’s] certainly daunting in some respects, just because of the sheer size. The space in which we’ll be cooking some of the dinners will be for around 500 people, which is a big challenge,” he said.
“I think for us here at the restaurant, we’re always focused on just making what we do better all the time, and pouring as much energy as possible into our garden and to what we grow, and just refining the experience.
“Really, something I’d never, ever want to do, is rest on our laurels.”
The Agrarian Kitchen will provide a thoughtful three-course menu using local and seasonal produce, sourcing much of the ingredients from Victorian producers, while also adding “little bits and pieces” from the restaurant garden at New Norfolk.
Bookings to the exclusive AO Glasshouse start at $1260.
The Glasshouse will be open for dining during the night session quarterfinals, at lunchtime and in the evening for the men’s semi-finals, plus the men’s and women’s finals.
