A New York-style cocktail lounge, stylish Cantonese and open kitchen extravaganza have been revealed as three more of Crown Sydney’s venues opening in December.

The Daily Telegraph can announce The Waiting Room (TWR), Silks and Epicurean will make up three more of the hotel’s 14 offerings to reside within what Crown Sydney Executive General Manager Mark Holmes called a “world class dining destination”.

“We wanted to create a dining destination that’s diverse and eclectic – and a destination that really has something for everyone in Sydney to enjoy,” he said.

“From a fine dining experience, to great, authentic Chinese, right through to just being able to sit by the water and enjoy a drink – we wanted this to be a place that Sydney wants to return to time and time again.”

The three venues will join a handful of already announced restaurants, including world famous Japanese hot spot Nobu, including Yoshii’s Omakase at Nobu, On Core by world famous chef Clare Smyth, a’Mare by Alessandro Pavoni and Woodcut by Ross and Sunny Lusted.

Designed by internationally renowned New York design firm Meyer Davis, Crown intends TWR to rival the world’s most famous hotel lobby bars.

With two distinct areas, the bright, vibrant terrace and moody, lavish indoor area, TWR will transform from casual lounge by day to sophisticated cocktail lounge by night.

“Some of the best bars in the world are inside famous hotels – Sydney needs that and TWR will deliver it,” Mr Holmes said.

Silks will star authentic Cantonese, not shying away from the spice the cuisine’s north is famous for.

In addition to classic northern dishes such as Xian Spicy Cumin Lamb Noodles and Peking Duck, Silks will also showcase a stylish take on yum cha with Scallop and Lemon Myrtle Dumplings, Lobster Cheong Fung and Sea Urchin Dumplings.

“Our vision for Silks is to create an opulent dining room experience that merges historic and contemporary influences that feels like you are in a Chinese mansion – overlooking one of the world’s best views,” Mr Holmes said.

Crowd-pleaser Epicurean will have a wide range of cuisines on offer all cooked in the restaurant’s nine open kitchens.

With a chocolate fountain and panoramic views of Sydney Harbour Bridge, everything Epicurean is intended to wow.

“Epicurean will provide Sydney with a sophisticated open-kitchen dining experience, offering a variety of cuisines that showcase the freshest produce,” Mr Holmes said.

Crown Sydney’s hospitality precinct will open December 2020.
