Foxy bakery enjoys big success

THE newest bakery in town, Foxy's, is just about to enter into its third week of operation.
Owned and operated by Stanthorpe locals Kristopher and Fiona Fox, and Rebecca Schroder, this bakery has been the talk of the town for weeks.
"It took us approximately six weeks to get the building looking as we imagined," Mrs Fox said.
With both Mr and Mrs Fox having extensive bakery experience, they had ideas around layout and colour schemes to not only brighten up the shop, but to make it more accessible and user friendly to customers and staff alike.
"The quick turnaround could not have been achieved without the support of our families and friends who have all chipped in or supported us on this venture," Mr Fox said.
"It has always been a dream of mine to have my own bakery, and I'm just one of the lucky ones that have been able to gain this opportunity at such a young age in the community I call home.
"It was often a passing comment that we would open a bakery, I think it has been almost three years that we have been joking about, but seriously wanting to, own and run a bakery within Stanthorpe," he said.
For the Stanthorpe locals, it was all about taking an oppoprtunity that presented itself.
"I don't think we ever imagined it would happen in 2014, but we weren't going to let such a rare opportunity slip away from us," Mr Fox said.
Mr and Mrs Fox said the bakery had received great community response, particularly on Facebook.
"We are thankful that our friends and the wider community have been proactive in 'liking' our page and helping us get the message out about our new business," Mrs Fox said.
Being open on a Sunday has seen Foxy's enjoy positive feedback from not only the local community, but the travellers who are in search of coffee and a quick bite to eat.
