IT IS an unlikely combination - a classic Aussie Parma and Thai pepper beef.
Although Simon Lee has only been in Roma for two weeks, he's hoping to inspire diners with his love of flavours near and far.
The new owner-chef of BC's Restaurant, the muti-award winner for numerous food and restaurant awards comes to Roma with a passion for using fresh, local ingredients.
"I'm from Cambodia originally, and before here I was in Banana. I've also had my own restaurant in Brisbane's Chinatown and worked up north near Atherton,” he said.
"I have over 20 years experience and I love to cook Asian dishes so I hope the people of Roma will like what I can cook.
"We are trying to use all local and fresh ingredients because we are all supporting each other.”
Mr Lee said the new menu was a celebration of the food western Queenslanders loved and the food he loved to cook.
"Because I run my own I like being able to cook what I like,” he said.
