“It will be modern Indian or progressive Indian with a few of the items on the menu something quite different,” said Laxmi George, who owns the business with chef husband Binu.
“We’ll just see how it’s accepted and appreciated and then we’ll look to add a few more dishes.”
Mrs George said the modern dishes will involve traditional Indian flavours, but served in fun or interesting new formats; while the rest of the menu will take inspiration from all over India – but particularly the west – and include classic curries, naan and papadums. Coconut, nutmeg and garam masala will flavour a large portion of the dishes, while the couple plans to use many recipes handed down from their grandmothers.
Wine will also play a big part in the offering, featuring a succinct list of mostly Australian vino hand-picked by the couple, who lived in South Australia for 15 years before moving to Brisbane last year.
“Every wine we have on the menu we’ve personally visited the winery and they are in our personal collection,” said Mr George.
With the restaurant taking the space of Lodger restaurant and bar, which closed during COVID-19 restrictions, the site has been given a dramatic makeover with a black and copper theme, subtle nod to the Brisbane River and outdoor seating for up to 30.
