A Mackay-based food truck will spice up Queensland’s regional towns.
The dynamic duo behind Fusion 88 are “western boy” Kelvin Isaac and Malaysian-born cook William Tan.
“William’s mother has a street food store in Malaysia, cooking has always been his passion,” Mr Isaac said.
This pair is passionate about good food and determined to ensure regional communities do not miss out.
“We love to take something different to the smaller communities that don’t have a lot of options,” Mr Isaac said.
“We want to take the food to the people.”
The food truck travels from St Lawrence in the south to Bowen in the north and rarely stay at the same spot for more than one day a month.
The lads will now trek further west to Dysart and Middlemount, and even have plans for a trip to Winton in the near future.
The pair appear to avoid the mundane and enjoy the nomadic lifestyle that often entails camping alongside the truck.
Even Fusion 88’s menu speaks to variety.
“We never do the same menu for our main courses,” Mr Isaac said.
But they do repeat some fan favourites such as William’s pad thai, tom yum fried rice and sweet and sour pork on rotation.
“And of course everyone loves William’s curries, he runs red, yellow and green,” Mr Isaac said.
Fusion 88 will be treating Mackay this weekend at the Mackay Twilight Markets on Saturday and the Northern Beaches Bowls Club on Sunday afternoon.
