Former fine dining star launches loaded fries venture Fryboi
A former talent from Brisbane’s Otto Ristorante has swapped white tablecloths for the deep fryer, with his fresh new venture.

BRISBANE’S Stephen Kakoniktis is going from fine dining to loaded fries, launching a business entirely dedicated to the humble spud.

Fryboi is the brainchild of the former restaurant manager at Brisbane’s up-market Otto Ristorante and good mate Chris Withers, who launched UberEats across Asia-Pacific, and will specialise in waffle fries topped with everything from fried chicken to meat patties and mustard.
The eatery will operate as a ghost kitchen in Southport on the Gold Coast, only offering delivery through UberEats, Menulog and Deliveroo, and pick-up with no dine-in available.
It’s a follow-up venture to their recently opened American-style fried chicken venture, Cluccboi, which is operating out of the same space.
“Loaded fries are one of the pillars of indulgent foods. We want to do it justice,” said Kakoniktis.
The menu is still being finalised, but the potato creations will include everything from the “kimchi krunch” and “naughty nachos” to the “animal style” and “hamburger fries”, with a poutine-inspired dish also in the works.
The business is due to kick off on September 25, delivering to select suburbs across the Gold Coast.
Two more “boi” concepts are also in the pipeline for the gents, with those to be rolled out in the next few months from the same Southport industrial kitchen.
