Matt Golinski visits Dalby for Delicious and Delightful Festival

The renowned chef will take the stage at this weekend’s Delicious and Delightful Festival, and reveals what else he has planned while he’s in town. Here’s everything you need to know:

Celebrity chef Matt Golinski will lead his first ever Dalby cooking demonstration at this weekend’s Delicious and Delightful Festival.

The former Ready, Set, Cook star is expected to arrive in town Friday night. telling the Dalby Herald it was not his first experience with the town.

Golinski said he often visited Dalby for lunch on the way to other regional shows, and was excited to get to know “what makes the town tick”.

“It’s a beautiful town, this weekend it’s all about what foods are in Dalby, it’s chickpeas, sorghum, mung beans and things like that,” he said.

“It’s nice to be able to showcase what each region is known for and it just so happens I love chickpeas and mung beans.”

Golinski said he was keen to show Dalby residents the different ways they can use local produce.

“I’ll be using chickpeas soaked raw to make falafel, chickpeas for hummus and flour as well, and I’ll make chickpea pancakes.

“I’ll also use mung beans – you can use them as a bean or sprout – there’s so many different ways to use them,” he said.

The Queensland chef also paid a visit to the South Burnett last weekend to showcase the region’s pork industry at BaconFest.

“One of the things I love, specifically when I’m going from Kingaroy to Dalby is seeing all the sorghum when it’s in flower, that’s what’s really special I think its stop worthy for photos.”

Golinski who has been touring regional towns for 15 years, showcasing different produce that farmlands have to offer, recalled when he first realised what makes an epic cooking demonstration.

“I was talking to Miguel about this, about 20 years ago we were at an event in Sydney and it was Jamie Oliver on stage in a park doing a cooking demonstration,” he said.

“He (Jamie Oliver) was on the back of a truck, he had a full jazz band and a drum kit set up, he was playing the drums while cooking scallops on the frying pan at the same time.

“All of us guys who were there – Alastair McLeod, Miguel (Maestre), Manu (Feildel) – we all went, ‘Oh that’s what a cooking demonstration is. It’s entertainment.’”

While Golinski said he wouldn’t be bringing the drum kit out on stage in Dalby this weekend, he’s hoping residents have a good time and learn about where the food on their plate comes from.

The renowned chef is aiming to participate in the colour run Saturday morning before meeting members of the community.

“I’d love to see a mung bean farm. I might try and tee up a farmer to show me around,” he said.

Residents can catch Golinski’s cooking demonstrations in George Anderson Park on Saturday.

Sessions will be held at 1:15pm, 3:15pm and 5:15pm.
