THE school holidays have Dan and I reminiscing about our childhoods growing up on the Fraser Coast. We used to jump on our bikes and venture out for the entire day with fishing rods and $5 in our back pockets. It's still much the same these days - except for mobile phones and the fact that you would need $20 in the back pocket.

These holidays, keep the kids busy in the kitchen with these homemade sausage rolls we know they will love.

Sausage rolls:

INGREDIENTS: 500g pork mince 5 sheets of good quality puff pastry 1 carrot, peeled and grated 1 green apple, grated 1 onion, grated 1 egg 1 egg, beaten 1 cup cheese ¼ cup parmesan.

METHOD: Preheat oven to 200C. Place all ingredients, except your beaten egg and parmesan cheese, in a large bowl. Use your hands to combine the mixtures.

Your puff pastry will normally come in a big square. You will need to slice it in half then place it on a clean bench. Take the filling and spoon it all the way down the middle of your pastry rectangles, then roll them up.

Brush your sausage rolls with the beaten egg wash and sprinkle with parmesan cheese.

Place sausage rolls on a tray and bake in oven for 25-30 minutes until golden. Serves 4.
