Crown Sydney: Alessandro Pavoni to open a’Mare; Ross and Sunny Lusted open Woodcut

Crown has announced two more restaurants and the chefs who will lead the foodie charge – and there are some familiar faces Sydney foodies will be ecstatic to see.

Crown has announced the stellar line up of chefs that will lead the culinary charge at its new Barangaroo casino complex and two more of the precinct’s top restaurants.

Ormeggio at The Spit’s Alessandro Pavoni; beloved Bridge Room power couple Ross and Sunny Lusted; leading sushi master Ryuichi Yoshii and returning superstar Sarah Briegel are sharpening their knives and pressing their chef whites in preparation for Crown’s December launch on Sydney Harbour.

Crown Sydney Chief Operating Officer Peter Crinis said the combination of these identities would further boost Sydney’s reputation as a major hospitality player.

“Our hope is to make Crown Sydney a world-class dining destination that all of Sydney will enjoy, by merging the best of the local food scene with the best in the world,” he said.

Hospitality power couple Ross and Sunny Lusted are finally making their comeback after they closed their acclaimed restaurant Bridge Room April last year, now helming their new restaurant Woodcut.

As hinted by the name, diners can expect dishes prepared in wood and charcoal grills, wood ovens and steam kettles with a menu that will change daily depending on what’s hot at the markets.

“Imagine whole John Dory in a cast iron pan straight from the wood oven, Queensland mud crab cooked in steam kettles or the rich and earthy flavours of duck slow cooked in clay pots,” Ross said.

Nationally acclaimed and award-winning Sydney chef and restaurateur, Alessandro Pavoni will revert to his Italian roots with a’Mare, a restaurant he aspires to make the best of its kind in the country.

“It has been a dream of mine to create the best classical Italian restaurant in Australia,” he said.

“The dining experience at a’Mare will bring to life an element of theatre and the old school sense of service that Italy is known for by a brilliant team of wait staff.

“Some dishes will be finished at the table to create an immersive experience for our diners, and of course, an element of surprise.”

Hotly anticipated Japanese hot spot Nobu will star Yoshii, one of Australia’s leading sushi masters with 38 years experience, carrying out Yoshii’s Omakase at Nobu.

Omakase, a dining style that leaves all the decisions in the chef’s hands, is one of Yoshii’s specialties, having created Omakase feasts for the likes of Chef Nobu himself, Yoko Ono, Tom Cruise and Pink.

“One of the things I love most about Sydney is the seafood produce we have access to, so I can’t wait to start creating dishes together with Chef Nobu that hero that remarkable fresh local produce,” Yoshii said of his next project.

Finally, born and raised chef Sarah Briegel hung up her apron as executive chef at the luxury 5-star Mandarin Oriental in Shanghai to take up the role of Crown Towers Sydney Culinary Director.

With world class experience, Briegel will lead the overall culinary program and help realise Crown’s aspirations of becoming a globally renowned dining destination.

Pavoni, Ross and Sunny, Yoshii and Briegel join English Michelin Starred chef Clare Smyth on Crown’s culinary line-up.
