A GORDONVALE student has topped the state in Australia’s healthiest lunch-box competition and his mother has shown fresh ideas don’t have to be time consuming.

Trained chef Laura Day tries to create a healthy lunch box for her son, St Michael’s Year 1 student, Darcy Day.

“I aim for it to be diverse for him to eat lots of different foods. It’s good he happens to like lots of different foods,” Ms Day said.

“There’s things he will regularly have in his lunch box. In school holidays I make a heap of lunch box items that I can freeze like savoury lentil muffins and black bean brownies.”

Ms Day said a healthy lunch box did not have to be a chore.

“I know I can put them in his lunch box and cover a few food groups in those items,” she said.

“Then it’s just fruit and veg with those freezer items. Cherry tomatoes, cucumber, grapes, berries, a lot of the time I don’t even cut anything up.”

Darcy works with his mum to choose things he likes in the lunch box including boiled eggs, quiche or wraps.

His lunch box was chosen from 167 entries Australia-wide.
