Edge Hill Butchery dominates regional Sausage King contest
Far North creativity have been honoured in the regional stage of a national contest with six local butchers earning accolades. Here’s the pick of the bunch.

EDGE Hill Butchery has dominated the competition at the regional Sausage King competition taking out four first places as well as a clean sweep in the gourmet category for their sausages and burgers.
The business, which is owned by Julie and Rod Leaver, has been a national and state finalist for the past three years and is hoping to secure a national finals spot again after the big win which now qualifies them to compete at a state level in October.
Winning products for the butcher include a wagyu beef and pickle burger, pork fennel and roasted onion sausage, Canadian maple and smoky bacon sausage and the free range chicken and pistachio sausage.
Ms Leaver said the competition in Cairns is fierce and he was excited to compete in Brisbane later this year.
“The Cairns region is always have very strong region and a hard one to win,” she said.
“We absolutely we had a great time and in total I think we won 11 places and now we are able to go to the state finals in Brisbane and hopefully go the national finals again.”
There was six independent butcher shops that entered the Far North edition of the competition including Russo Quality Meats, Marsh Butchery, Babinda Meat Mart, Malone’s Butchery Port Douglas and El Arish Butchers which saw over 100 individual products across the establishments entered for judging.
Australian Meat Industry Council Queensland state manager Roger Desailly said the event produced good competition and even better products.
“We were very happy with the North Queensland event it was once again very competitive and produced first class product and its great to see the independent butcher shops leading the region,” he said.
Ms leaver said they started competing to build a profile for their business and use customers feedback to choose the flavours they enter in each competition.
“It’s great for your profile and making customers more aware of our presence because it’s very hard to compete with larger supermarkets so if you can be called an award-winning butcher people are more likely to come and have a look,” she said.
“It’s also a good way to meet people and network in the industry especially at the state and national finals.
“You never know who is going to be the judge or what their taste is going to be so we use customer feedback to decide what flavours we are going to enter.”
The national finals are scheduled to take place in February 2023.
