Celebrity chef Adrian Richardson’s new Brisbane riverfront restaurant ready to open

With a celebrity chef at the helm, stunning river views, a menu of premium produce and wines that would make oenophiles faint with excitement, Brisbane is set to welcome one of the most anticipated restaurants of the year next week.
The 120-seat BOS will open at 480 Queen St in Brisbane’s CBD from hospitality heavyweight Chris Higgins (ex-Mr & Mrs G and Cha Cha Char) and top lawyer Liam McMahon, alongside TV kitchen king Adrian Richardson.
Taking the fourth-level site once home to Otto Ristorante, the new venue will specialise in steak – dry-ageing and butchering all their beef in house with a bespoke meat cabinet displaying the wares before it is cooked on either a wood-fired or char grill.
“I’m really excited about the beef we’ve been able to get hold of. A lot of different types of beef, everything from grass-fed to grain-fed, wagyu, 90-day, 100-day, 2000-day,” said Richardson.
BOS will open with about six steaks on the menu from four of the country’s best beef farms: Cape Grim, Jack’s Creek, Five Founders and Hancock Agriculture, with the latter’s 2GR full blood wagyu tipped to be a star attraction.
Ensuring the premium produce is cooked to perfection will be former SK Steak & Oyster chef Nick Foat, who will be in the kitchen alongside Richardson.
The pair will also turn out at least two hand-made pastas a day, say, ricotta gnocchi or pappardelle as part of the classic menu, alongside seafood and fish, plus an array of complementary sides such as beef fat-roasted potatoes, hand-cut chips, raw broccoli salad and heirloom tomatoes with buffalo mozzarella.
Sharing equal spotlight with the food will be the globe-trotting wine list which currently sits at an impressive 400 bottles, including a whopping 41 champagnes. It will cover everything from the affordable to the flashy, with plenty around $70 a bottle, as well as big hitters like a 2001 Chateau Margaux and 1994 Grange; plus the restaurant’s own privately bottled 2007 Barossa Shiraz for about $100. There will also be a generous 30 wines by the glass starting at $14.
Popular beers and classic cocktails will feature, too, alongside a signature margarita menu with blends using everything from chillies to maple syrup.
The Japanese black and Gucci green restaurant, with a separate private dining room for 20 plus an outdoor deck, will open November 15.
