Adam Liaw’s cucumber, feta and apple salad
Not a Greek salad, but I love the balance of a sweet and tart apple with salty feta and the freshness of cucumber.
Ingredients
2 Lebanese cucumbers, deseeded and diced into ½cm cubes
½ red onion, diced into ½cm cubes
1 Granny Smith apple, cut into ½cm cubes
juice of ½ lemon
salt and black pepper, to season
1 tbsp extra virgin olive oil, plus extra for drizzling
150g feta
½ tsp Greek oregano
Method
Step 1
Combine the cucumber, onion, apple and lemon juice and season well with salt and pepper. Add 1 tablespoon of olive oil and mix well.
Step 2
Transfer to a serving plate, crumble the feta on top and sprinkle the Greek oregano over the feta. Drizzle with olive oil and serve.
Adam’s tip: Season and dress this finely chopped salad just before serving as you don’t want the salt to draw too much moisture from the cucumbers.
