Jerrie-Joy Redman-Lloyd auditions her platters for every new party. “I set them out on the table the night before, with an eye for contrasting colours and textures,” she says. “It helps me work out what food to do, and where to put it.”

Those who pass the audition, stay. The rest are put back on the shelf.
