Former Olympic swimming medallist Nicole Livingstone knows from experience that the shelf life of a pro athlete is short, so they must build other skills.

Nicole Livingstone may be best known for her Olympic medal-winning performances in the pool in the 1990s but as we sit down for lunch, it’s AFL football rather than swimming that dominates the conversation.
Looking out the window of Uncle, a Vietnamese eatery tucked away above the Paris end of Collins Street, we see a mostly empty street – we manage to meet between lockdowns but even so, the CBD is quiet – and a tattered Collingwood Magpies flag.
