Shibui Redskin soft-serve brings back memories at Tasting Australia

Quang Nguyen’s Redskin soft-serve with strawberry fairy floss cloud and toasted marshmallow from his dessert bar Shibui is sure to turn heads at Tasting Australia’s Town Square where it will feature among the Small Plates menu.

On one level, it’s a dessert that brings back nostalgic memories of mixed lolly bags and the corners delis of yesteryear. On another, it has a touch of Heston-style magic, with a pink strawberry cloud seeming to float in mid-air.

Either way Quang Nguyen’s Redskin soft-serve with strawberry fairy floss cloud and toasted marshmallow from his dessert bar Shibui is sureto turn heads at Tasting Australia’s Town Square, where it will feature among the Small Plates menu.

More than a dozen different stalls will contribute to Small Plates, covering a range of different food cultures. Soza’s will be serving Sri Lankan specialties such as lamb kottu and hot buttered squid, while Moi An will have the sizzling Vietnamese pancake banh xeo, in either chicken and prawn or vegetarian versions. La Popular Taqueria’s Daniella Guevara has designed a range of tacos, including Baja-style battered flathead and grilled skirt steak.

Tasting Australia programming director Jock Zonfrillo (Restaurant Orana) has come up with “Chook Shack”, where local chickens will be cooked over charcoal and served with a choice
of sauces.

Quang says he has been shocked by the popularity of his dessert creation, which made its debut at the Fringe.

“A lot of people came into Shibui for the Redskin ice-cream but the soft serve has gone viral,” he says.  Quang's bubble tea soft serve  also went viral just last month.

“We had a lot of parents come down and say ‘We used to eat that as kids’. People are surprised how much it tastes like a Redskin. The playfulness of it really works for festivals.”

Town Square is in Victoria Square/Tarntanyangga from Friday until April 14 (closed Monday, April 8)
