Deviation Road’s winemaker, Kate Laurie, is one of the stars of the Adelaide Hills’ sparkling scene, with a range of traditional-method bubbles reaching all the way to her finest vintage blanc de blancs, Beltana ($100). This NV rosé style is superb, crafted from pinot noir and chardonnay in the classic manner, eight months in oak then 12 months on yeast lees in the bottle to deliver complex and enticingly wild aromas, spilling into classic strawberry cream biscuit flavours with a neat little spice lift to finish. A fizz for finger food.
