Sparkke’s new rooftop offering in city’s southwest, as company plans to expand interstate

Sparkke at the Whitmore’s rooftop area has been given a new bar and kitchen, as the female-founded beer and wine company announces plans to expand nationally.

Sparkke at the Whitmore will launch its revamped rooftop bar this weekend.

The brewpub, which operates out of a 180-year-old building on Morphett St, has upgraded its top level, which can hold 200 people.

It comes as owner Sparkke Change Beverage Company announced it was planning to expand nationally, starting in Melbourne where it will open its second venue “soon”.

Sparkke at the Whitmore’s rooftop has been given a new bar and kitchen, which will serve street food by award-winning head chef Emma McCaskill.

Ms McCaskill, formerly of Magill Estate and The Pot restaurant, hoped the new bar would attract more people to the city’s southwest.

“It is a real social space … and we wanted it to be done in time for summer,” Ms McCaskill says.

“This is the perfect place to come to after you finish work on a Friday – it is a real meeting spot up here.”

According to Adelaide City Council’s development register, the upgrade cost $129,500.

It comes eight months after the hotel was opened, following a $1.8 million renovation.

The pub, in collaboration with Adelaide Hills-based Applewood Distillery, last week launched its “The Great Dame Gin”, which celebrates female winemakers, mixologists, distillers and chefs.

It is inspired by the spices and botanicals used in the Sparkke kitchen.

“We work a lot with spent citrus, so we infused the pure ethanol with this and wild watercress with its peppery notes features too,” Ms McCaskill says.

“We use a lot of Indian spices, such as coriander and curry leaf, which is a unique element that features strongly within my cooking and reflects my Indian heritage.”
