The man behind that top-selling flaky South Australian specialty meat pie, Vili Milisits, says run-of-the-mill development delays amounting to about two months have kept his inbox full of “when, when, when” emails, but he is happy to announce 30 new staff are primed and ready for the rush.

It will mimic the original Mile End cafe, and possibly lead the way to another to meet equally big demand in the southern suburbs, “but we won’t be looking at that for 12 to 18 months”, he says.

Requests have also come from Sydney and Melbourne, where there are small Vili’s bakeries but the SA businessman says he is not a fan of franchising and it is unlikely he will venture over the border.

“My name is my brand and I don’t want to lose it or abuse it,” he says.

The new cafe is at 426 Main North Rd, Blair Athol.
