So it turns out there are a LOT of Australians regularly making mayonnaise from condensed milk. Yes, condensed milk. Of the sweet kind. The stuff you use to make caramel.

This might be the weirdest (and coolest) hack we’ve heard all year. And apparently it’s “the only mayo to have”…

Condensed milk mayo: a new recipe discovery

We posted a Facebook question, asking Aussies about their favourite dishes. One of the commenters said that they love having prawns “with homemade mayo from condensed milk”. We thought it was a one-off… and then we spotted the conversation it sparked.

Apparently, it’s been a thing for a while. One person described the recipe as “an oldie” (they’re always the best kind), adding that “each family had its secret ingredient or method” of making it. Another said that it’s “the only mayo we had as kids” and they’ve now passed the recipe down to their children.

How to make mayonnaise from sweetened condensed milk

After a bit of digging, we discovered a real recipe for condensed milk mayo on our sister website, Australia’s Best Recipes. The creator ‘rick-ash’ simply mixes 410g condensed milk with 1 tsp mustard and 2 tablespoons of white vinegar. He says it’s “great on home-made potato salad”.

How to use condensed milk mayo

So, what else are Aussies doing with this sauce other than adding it to potatoes? One Facebook user said they “love it with lettuce on fresh bread”, while another said it’s a must “with fish and chips” or in a chicken roll. One proudly claimed: “My pop turns that mayo into the best seafood sauce!”

BRB guys, we’re off to grab the nearest can of condensed milk we can find.

Condensed milk curry is also a thing

After we first realised how many Aussies love a bit of condensed milk mayo, we started thinking about what other dishes the sweet stuff could lend itself to. Food Director Amira Georgy suggested a South East Asian curry.

Amira said: “Often these kinds of curries call for a hit of sweetness in the form of palm sugar, brown sugar or kecap manis to help balance flavours,” she said, “so I thought the addition of condensed milk would not only add a lovely sweetness, but a wonderful creaminess as well.”
