Sushi salad
Serves: 2
Prep: Under 10 mins
Ingredients:
- 40g mayonnaise
- 1tsp wasabi
- 30ml lime juice
- 10ml soy sauce
- 4 radishes
- 1 lebanese cucumber
- 3 spring onion
- 100g kale
- Half avocado
- 375g sushi rice
- 150g spring water tinned tuna
- 2tbsp pickled ginger
- 1tbsp furikake
- 1 nori sheet
Method
1. In a small bowl, mix the mayonnaise, wasabi paste, soy sauce and lime juice.
2. Finely slice the radishes using a sharp knife or mandolin. Slice the cucumber and spring onions into thin matchsticks, then finely chop the kale and dice the avocado.
3. In a large bowl, combine the rice, tuna, radishes, cucumber, spring onions, kale, avocado, pickled ginger and dressing. Mix well to combine, then divide between two plates and garnish with furikake and torn nori sheet.
