Who needs to do a daily bakery run when you can prep your fave pastry-inspired brekky at home. These baked oats are bound to be your latest obsession.

One of Kic co-founder Steph Claire Smith's favourite breakfast recipes, this healthy take on a popular bakery treat will have you leaping out of bed. 

"On the weekends, I love heading out on a morning walk with Harvey and Josh to our local bakery to grab coffee and almond croissants. So, any chance I can replicate this bliss throughout the chaotic work week is a ‘yes’ from me," Smith says.

"Having brekky prepped the night before is perfect for those mornings when you’re running late, juggling daycare drop off and getting yourself to work (Mums, IYKYK)."

"This recipe honestly tastes just like your bakery fave but it’s packed with protein and oats, so you’ll be fuelled throughout your morning. From drop-off to the gym and into my first meeting, this brekky is one you can prep and go."

Baked almond croissant oats

Serves 6

30 minutes

Ingredients

  • 3x ripe bananas

  • 300grams rolled oats

  • 90grams vanilla protein powder

  • 1tbsp baking powder

  • 1.5tsp bicarbonate soda

  • 0.25tsp Salt

  • 550ml low fat milk

  • 0.25tsp almond essence

  • 80grams almond butter

  • 60ml maple syrup

  • 40grams flaked almonds

  • 1tbsp icing sugar

Method

  1. Preheat the oven to 175°C and line a 20cm square baking tin with parchment paper. Mash the bananas in a large mixing bowl, then add the oats, protein powder, baking powder, bicarb soda, salt, milk and almond essence. Whisk to combine, then transfer to the baking tin.

  2. In a small bowl, combine the almond butter and maple syrup. Drizzle over the batter and gently swirl it in with a fork or skewer to create a marbled effect, then sprinkle the sliced almonds evenly on top. Transfer to the oven and bake for 40-45 minutes, or until a skewer comes out clean. Let cool for 5-10 minutes, before dusting with icing sugar, slicing and serving.
