SMALL but influential Hyde Park restaurant The Pot, which has been home to chefs including Jordan Theodoros and Adam Liston in its various iterations over the past 20 years, will disappear from the dining landscape next month.
While owner Simon Kardachi and current head chef Max Sharradare going nowhere, the venue will be reborn as Nido (meaning nest) – a community-minded Italian aperitivo bar and pasta-focused diner.
“We want it to be a place where people can have some fun,” says Max.
“We want to liven it up and return to being a community eatery.”
Max will be tapping into his Italian heritage through his mother’s family who are from the Friuli-Venezia Giulia region in the northeast of the country – particularly after he spends time there later in the year.
His first menu will open with salumi and snacks such as a “rootello tonnato” with kangaroo replacing the usual veal, before building to pastas (beetroot ravioli with a light pesto-style sauce made from the leaves) and grilled meats including bistecca.
The last service of The Pot will be on Sunday, March 31. Nido will open on April 4, Tuesday to Sunday
