“It’s the renovation we’ve wanted to do for a long time,” says Nick Sando, general manager of Pulteney St pub the Original Coopers Alehouse.

BB Architects, specialists in conservation of heritage buildings, were brought in to restore the 1879 city pub which is also known as the Earl of Aberdeen. The architectural team, headed by Victor Temnoff, started by getting rid of a 1980s steel-framed glass roof – which was dated, dusty and let in too much heat – and instead gave the heritage-listed property a curved timber slatted ceiling featuring a wave form. “Partly to appeal to Nick’s surfing background,” notes BB Architects director David Brown.

Water damage resulted in the jarrah floorboards needing to be replaced, but the classic timber look of the pub was retained and includes jarrah bar tops.

The BB team worked closely with chef Chris Sellors to achieve a more efficient working space, which now includes a new wood-fired pizza oven, new counter areas and a dry ager for the Alehouse’s steaks.

“We’ve spent a bunch of money making the pub look amazing and we’ve proudly used local suppliers for every last part of the process,” Nick says. “We’ve also stayed true to our values of providing great food and service at reasonable prices.”
