The waters of Gulf St Vincent almost lap at your legs at new diner, Pearl.

Positioned just metres from Aldinga Beach, the wooden shack-like licensed restaurant and cafe officially opens on Friday, serving grab-n-go treats and coffees as well as serving a full menu under a big veranda.

Acclaimed chef Julian Rydon (mobile grill The Vendor; Porteno, Sydney; Claypots, Melbourne) is keen to let his dishes do the talking – he and partner Bec Seidel have no Pearl website and no Facebook page, Julian saying that for now he’s “not doing any media”.

However, we do know he will be cooking with fire and woks in his custom-built kitchen that boasts a mammoth wood-fired grill. Get there before word spreads.

Opens Friday Jan 31, Aldinga Boat Ramp, 53 Lower Esplanade, Aldinga Beach.
